Roast Duck with

Wild Blueberry Sauce

INGREDIENTS

  • 1 duck leg (per person)

  • 2 cloves garlic, minced

  • Black pepper (to taste)

  • Salt (to taste)

  • One glass of white wine

  • 2 tablespoons of pickled blueberries (or to taste). Set aside.

PREPARATION

Pat the spices on the duck legs in a bowl, add wine and marinate for at least three hours.

Grease a pan with olive oil, place duck in pan, pour remaining marinade over duck and bake at 325° F for 50 minutes (meat temperature should read 165° F).

Remove from oven. Stir pickled blueberries into gravy and ladle over duck.

Serve with rice & sautéed asparagus.
